We students are currently in beautiful Chiang Mai. This cultured city is nestled amongst Thailand's northern mountains and is famous for its university, music scene, and delicious northern cuisine. Today is national teacher appreciation day in Thailand, so we prepared a special presentation for our professors. Just after breakfast we presented them with beautiful flowers arranged Thai style, thanked them with a traditional Wai, and offered them a thank you card for all the patience, guidance, and wisdom they have offered us so far.
With little time to digest breakfast, our first part of the program began: Thai cooking class. There we met Youi (YOU-EE), an amazing Thai chef who has been teaching thai cooking for over a decade. Even after winning numerous awards, hosting celebrity chefs, and judging cooking competitions, she remains beautifully humble. Her humour-filled wisdom and zest for food and creating flavor was inspiring. All together we each made ourselves three different dishes: Pad Thai, Green or Red Curry, and Tom Yum Soup. We all can't wait to come home and cook for you! We wish everyone all the best.
